Chef Michael Weinstein has been a fixture on the fine dining culinary scene for over 20 years and has worked at some of the finest restaurants in Dallas, TX (he’s also appeared on national TV, in print, and in podcasts). His love affair with food began from his Grandmother’s cooking and the fact that his Dad had a garden, so he could use what his dad grew. He learned to make pancakes, chocolate chip cookies, French toast, and some egg dishes at a young age. Never thinking he would be a Chef, he started to enjoy watching the Great Chefs series on PBS and started to write down what he saw the Chefs preparing, then he would try to make what he saw at home. Soon, he was at culinary school learning, and once he got his first job in a kitchen, the growth of his culinary experience began.
One night, he was making a family dinner since there were family birthdays and an anniversary to celebrate. He has a niece and nephew with multiple food allergies, so he made a dessert everyone could eat. His idea started as an interpretation of a sopapilla. He fried corn tortillas and then dusted them with a cinnamon sugar mix. Not knowing what to do with the strawberries he got, he decided to dice and puree them. Once presented to his family, everyone said it looked like chips and salsa for dessert. A light bulb in his head went off. Next thing he knew, he was taking his creation (and his business name, Dread Head Chef) out to local markets to sell his products: sweet salsas and dessert chips. Soon after, he sold his products in local Whole Foods and Kroger stores.
Michael has continued developing his brand and awareness of eating healthily. Seeing the potential of the medicinal qualities of cannabis and his love for said plant, the natural merging of Chef meets Shaman has begun with his latest line of CBD-infused Sweet Salsas and Caramels, which are a subtle protest of the current state of edibles in the industry. Chef Michael said, “The idea of this amazing medicine trapped in a drugstore gummy bear seems so counterintuitive that I couldn’t stand it. I had to devise a natural way to introduce people to the benefits of CBD.” The newly rebranded Rebel Chef line (previously Rebel Dreads Corp) of CBD-infused products has launched and includes Caramels, Sweet Salsas, Topical Oils, Tinctures, Intimacy Serums, and Pet Elixirs.
